Posana® Café is an upscale casual restaurant located in downtown Asheville on Historic Pack Square serving Contemporary American cuisine. We source unprocessed, premium ingredients that enable us to serve delicious, fresh food, which can also be enjoyed by those with gluten allergies. There is a wealth of fresh fruits, vegetables, meats, and dairy, the majority of which we are able to source locally during the growing season. This creates the foundation for all of our ever-changing menus that update with every harvest.

Our Executive Chef
Posana® Café’s Executive Chef and co-owner, Peter Pollay, is an honors graduate of The Culinary Institute of America. Peter has worked with some of the “greats” in the restaurant industry: Chefs and restaurateurs such as Wolfgang Puck, David Burke, Waldy Malouf, and Larry Levy. It’s no wonder why Posana has become a local favorite. Years of the highest quality restaurant experience, a devoted staff, and a firm commitment to offering creative, fresh cuisine inspired by local growers sets the stage for a fabulous dining out experience.
Our Culinary Team
Chef Peter and Posana Café’s culinary and pastry teams consistently create superb dinner, and brunch menus offering unsurpassed flavor, freshness, and quality. All of Posana’s dishes, desserts, and pastries are prepared from scratch and feature all natural and locally sourced ingredients. Our talented teams of chefs work to incorporate menu items that anyone can eat, including vegetarians, vegans, and as always, those sensitive to gluten.
Since our inception, the philosophy at Posana Café has been to offer a seasonal menu that draws inspiration from locally available foods. We see ingredients as those items which require a little washing, trimming, and seasoning—not something from a box or can. We are fortunate to have strong relationships with local growers and producers that enable us to offer the freshest ingredients available in every season. Our partnership with the Appalachian Sustainable Agricultural Project (ASAP) and our connection to the WNC growing and food producing industry helps us emphasize the importance of operating in an ecologically conscious manner.
Because Asheville’s climate limits the diversity of ingredients that can be grown during the winter months, we only offer a 100% local menu once a year: every year on our anniversary, we hold a fundraiser for ASAP’s Growing Minds program. The rest of the year, the menu is dependent on the availability of seasonal and local items, which we incorporate whenever they are fresh, local, and in season.
We work with the people we do because we have high expectations for what our ingredients should be, and we proudly stand behind the environmental practices and quality of the food we source. Our seafood is sustainably harvested. Our chicken, pork, and eggs are cage free. Our beef is pasture raised. Our veal is crate free. We exclusively serve hormone and antibiotic free fresh meats that are certified humanely raised.
